This sweet whisky is born out of the Japanese tradition of Ume-Shu, which translates as Plum Alcohol. In late May and early June, hard, green, sour plums are harvested and combined with neutral spirit and rock sugar, then aged for 6 months to a year. Akashi does nearly the same as this version, allowing freshly harvested plums and rock sugar to rest in mature whisky. Here they remain for 6 months to a year, resulting in this simple twist on a Japanese classic.

Freshly harvested, Japanese ume sour green plums and rock sugar are added directly to matured barrels of Akashi Blended Whisky and aged for approximately 6-12 months.

Akashi Ume Plum Whisky is brimming with bright plum notes and hints of apricot, raisin, and honey with a touch of acidity at the finish. Try it neat, on the rocks, served with soda, or as a modifier in cocktail recipes that call for fruit liqueurs or rich sherry.
